The area down near I-5 is a little thin on coffee shops, so A Muddy Cup is a welcome sight at 266 NE 45th St. (corner of Latona). We saw that the sign went up earlier this week and stopped in today to chat with proprietors Sarah Dolezal and Mathew Willis.
The pair plan to serve coffee from Sol Colibri, which imports organic coffee directly from growers in Costa Rica. They’ll also sell baked goods from a variety of sources, and will be sure to serve a wide range of goodies, including those from vegan and gluten-free bakeries.
Dolezal and Willis couldn’t say when they’d be able to open A Muddy Cup — they’re waiting on inspections and the Health Dept. is backed up because of budget cuts, Willis said.
